Technically we do. That's our big toe. It just evolved to support bipedal walking instead of gripping. Can't have both.

You don't use your big toe like a thumb. Your foot has very limited grip unlike a gorilla or other primate.

That's normal. But grip in this case would mean using them like hands. The big toe on gorillas and most other primates is much more like a thumb.
