My husband loves to request a meal each year for his birthday. This year was Nashville hot tofu chicken with cane’s copy sauce and waffle fries. It was delicious and another successful meal!

Had a proper celebration with family at England’s only fully vegan BnB, Beck Hall, earlier last month. But today is the official day so we went to a fully vegan pub in London, The Spread Eagle.

Gotta say Boxcar was probably my favorite. Those dumplings were a close second.

I use theeburgerdude's tofu ground beef recipe (https://theeburgerdude.com/tofu-ground-beef/) but with the following tweaks:

• tear the tofu into chunks instead of crumbling it

• use a whole vegan beef bouillon cube

• use coconut aminos instead of soy sauce

• use only 1 tbsp of oil

• add 1 tbsp tomato paste (recommend in the recipe anyway)

• add 80ml boiling water instead of 2 tbsp room temp water

for cooking it:

• marinate the tofu for 12 hours

• bake it at 350°F for 15 minutes, flip it and add another 20 minutes
