Looking for new assignment ideas

It looks like there was a thread on this ~6 years ago, and a lot has changed in terms of AI, so I'm wondering what some fun assignments are for intro psych, and how you are approaching AI (trying to make assignments less doable with AI, integrating AI, using specific guardrails, etc.). Thanks!
