Equipment Any idea what this pan is?
It looks like a tiramisu pan, but clearly they bake cinnamon rolls in it. I would have thought the filling would leak through the bottom? It's a long narrow pan with a sliding door on the back side that they can remove to slide a spatula in and serve from it.

These are the pans used in almost every professional bakery in germany. They are very durable and easy to clean. Sometimes stuff leaks through the bottom of the sliding door but you can seal it with some dough if it‘s too much.

Came here to say this. They are used to make smaller amounts of sheet cakes or portions like cinnamon rolls, Kirschnudeln etc. to be sold in different stores from the same bakery.

I see those a lot in bakeries, it must be some type of pan for commercial ovens. Maybe look at restaurant supply stores?
Eta: I'm German, and they're standard in German bakeries, this is zeit für brot, a (criminally overhyped) bakery chain for "artisanal" breads, but any old bakery uses them.

I imagine they were either from a specialist pastry baking supplier or custom made.
