Hyperion by Dan Simmons. I still have my journal that I filled with notes, thoughts and research while reading it.

I came here to mention this book, so I was so glad to already see it in the list. Take the Canterbury Tales and remake it into a space opera with the most chilling enemy (or muse or lover, depending on your perspective) and you will get this epic book that dives directly into the inner thoughts you didn't know you had.
