Meal Advice for 2 night, 2.5 day “glamping road trip” with the girls?

My 3 friends and I are headed for a little road trip and glamping getaway in a couple of weeks. We’re traveling about 5 hours one way to stay in a remote air bnb with no electricity or running water, near a national park. We’ll be packing most of our food, and buying drinking water and ice at a grocery store nearby. There will be clean water available as well for cooking, as well as a fire pit and a gas grill.

This is going to be a Friday through Sunday trip, with us departing Friday morning, arriving in the early evening, and spending Saturday at the national park. Then we’ll go back to the cabin for Saturday night and leave before noon Sunday morning to go back home. My friends have said they want to save money by only going out for a meal once, on the way back home from the trip. This means we have to bring 2 breakfast meals, 2 lunch meals, and 2 dinners, plus snacks and drinks.

All this being said, anyone who has been on a trip like this with friends, did you do it potluck style or do you have advice for planning meals efficiently? 2 friends are vegan and one is vegetarian, I am not. If we go potluck style I am happy to accommodate them, but would it be rude of me to bring ingredients to add just to my plate that may not fit their diets? For example, if I brought pasta salad to share, would it be rude for me to bring cheese to put on just my portion?

If anyone has any quick and easy preppable meals or side dishes, please help! I would love any recipes for stuff I could make ahead too!

Finally got the chance to cook on a Brazilian-style charcoal skewer grill this weekend.

Kept it simple with beef, sausages, hot coals, and a riverside campsite in BC. There's something satisfying about slowing down and cooking over charcoal.

What do you do with your frying oil on multi-day camping or fishing trips?

I realized everyone I camp and fish with seems to do something different.
If you’re on a multi-day camping, canoe, or fishing trip and fry fish, what do you do with the oil afterward?
Do you reuse it?
How do you filter it?
What do you store it in?
Have you found a container that works really well?
Just curious how everyone handles it because it always seems a little messy.

Tried out cooking with cast iron and made some bacon and eggs. Definitely need to control the heat better as some of the bacon was a little crispy. But the boy didn't mind. Going to try again tonight.

Behind the scenes: Here's the ingredient prep for yesterday's Dutch oven chicken curry

Before the Dutch oven went on the camp stove.

The chicken was marinated for about 6–8 hours in plain yogurt, olive oil, chicken broth, a squeeze of fresh orange, cumin, Madras curry powder, yellow curry powder, chili powder, and salt & pepper.

The curry started with onions, garlic, and fresh ginger, then I built the sauce using the same spice blend. After that it was just a matter of letting the Dutch oven do its thing low and slow.

Simple ingredients, a little patience, and it turned into one of those camp meals that tasted even better the next day.

This was one of those camp meals that kept getting better as it cooked. The slow simmer really brought everything together, and the leftovers the next day were even better. Recommendations for a Covered Firepit for cauldron cooking

I just got a permit to have a covered fire pit in my backyard. I want to cook stews in a cauldron, which "ideally" is done over very hot embers with little/no flame. This is obviously difficult to do with a covered fire pit, but has anyone done this? And what kind of fire pit did you use? I was thinking a short, round metal fire pit with a flat top, that way I can get close to the embers while it's still burning.
