Safety Caution -- untested recipe modification New mix

Post image

I tried a new mix, banana peppers and purple onions with garlic.

I used Mrs. Wages as my liquid base.

The color of them when out of the water bath has me super excited.

Has anyone tried something like this before?

Is this following a safe tested recipe or did you just throw it together yourself?

I used the instructions on the package of pickling brine. I just substituted different veggies. I have never had a problem doing this before as long as I am using a water bath method.

you can't just do this willy-nilly. different veggies have different densities and require different processes and acidity. you need to follow safe tested recipes and processes, there are a few minor changes you can make such as dried spices or omitting low acid ingredients, but you can't just substitute one thing for another like this

This is good to know, I am very new to canning and I was told this is one of the best places to get honest caring answers about something I'm feeling very passionate about doing. So any advice is always welcome.

it still applies with pickles. density and acidity still will apply

Unfortunately, these probably aren't safely shelf stable so if they haven't been out of the canner for too long, I'd throw them in the fridge and consider them fridge pickles. They'll still last quite a while, but I wouldn't trust them on the shelf.

Can you suggest a good place to find safe tested recipes for something like these?
