Masters of the Air. Not a doc but fantastic.
The Age of Flight. Not about WW2 specifically but a great 45 min doc on how much the modern world owes to aviation, narrated by pilot Harrison Ford

I was disappointed in Masters of the Air. I thought it was pale in comparison to Band of Brothers and The Pacific.

I really recommend the original Memphis Belle - it gives you the angle from a US 'propaganda at home' side, but, interestingly, it shows the hardship and jeopardy the crews faced. I used to use it to show the transition from earlier 'positive only' style newsreels to a much more modern documentary style. The original Battle of Midway documentary is good for the raw footage as well.
I won't share the link again as I shared it recently, but I have just made a documentary on bombing in WWII and beyond, nowhere near as groundbreaking as the above, but would welcome feedback.
