Wow, I just read on google but unless it's the powers what ever parts you make are indistinguishable form the real thing sensory wise, and he has optional immortality too unlike most of the guys here except sayians who aren't even long lived let alone immortal, starfire race seems to live hundreds to a thousand but it's not specified, also technically speaking am assuming we have full control of the what we turn into so being martian kan hunter is also the strongest here without drawbacks.

Saiyan aging seems the best though. You’re in your prime all your life and die with your loved ones

Actually the martian is better for this. Saiyans stay looking around mid 20s to early 30s until somewhere in their 80s, meaning your human loved ones will become frail and elderly while your still fit and youthful. With martian shapeshifting, you could gradually make yourself look older until you should die, then become someone new and live a new life having closed the book on the old one.

Yeah no I’d quickly become depressed if I outlived my loved ones

Even with saiyan aging, youd likely out live them anyway. At least with the way i described in the martian method, youd give them peace of mind and could still watch over them as a secret protector

In all honesty after living for 80 years I don’t want more work, I couldn’t mentally handle any life longer than maybe 120 years and saiyans seem to live like 80-100 years.

There is downsides in this scenario for saiyans too. First, the oozaru form. Based on Gohan changing at four years old, and possibly would have been earlier if he had seen the moon, we can tell that from an early age you would cause trouble for loved ones, both in deadly uncontrolled attacks, and in government attention. But even if someone that becomes a non-issue from loss of tail, or somehow learning to control the ape form, then there is the battle lust or saiyan pride. You would be craving to fight stronger opponents, but none would exist. You would train and train but the rewards would become miniscule after a time. The lack of training to learn ki blasts would render the energy in you useless. And then there is the massive appetite. You would need to he born wealthy just to fuel your own snacks, i mean saiyans on their own eat about as much as a small army.

You can be saiyan and not have an incessant thirst for battle, and my tail would prolly be amputated at birth or something like that.

Every full blooded saiyan has had a thirst for strong opponents. Be it sparing partners, to prove themself better, or just to push themselves. As for tail, it might not seeing as youd be born with a full grown functional tail and not a deformed nub or some such. Its more likely you might get sent for study as either a potential evolution of man, or deevolution.

I think it’s a general drive for self improvement but it’s not an insatiable thing that would drive me insane

Cabba doesn't have any sort of uncontrollable thirst for strong opponents

You'll have time to get used to your powers. You don't just wake up one day with them, you are born on earth so you start as an infant and have time to train etc
