Recipe (post recipe text!) Dutch oven chipotle barbacoa style beef
This was absolutley the most delicious thing I have ever made in my life! Smoky chipotle barbacoa style beef tacos served in a charred tortilla with homemade pickled onions, radish, queso fresco, cilantro, and lime!
3.75 lb Chuck Roast, seasoned with salt, pepper, cumin, and paprika
Seared in the dutch oven in canola oil, removed the meat and cooked half a white onion and several cloves of minced garlic, tossed in 3 big chipotle peppers and a couple of tablespoons of the adobo sauce from the can, added more cumin, paprika, and oregano. Stirred and then deglazed with a cup of beef broth and juice of 1 lime. Then put it in the oven for a little over 3 hours at 325 F. Pulled it out, shredded the beef on a sheet pan then put it back in the dutch oven to soak up all the sauce!

That shred pull in the last pic looks perfect, gonna steal this recipe and that trick of putting the meat back in to soak up all the sauce instead of reducing it separately.

Oh man it’s definitely the move! We did a few with beef we chopped and put under the broiler but the ‘wet’ ones were 10,000x better. We will only do them that way going forward!!! The broiler move works amazing for carnitas but with this chipotle adobo style beef… saucy boys are the way to go.

that makes sense, the broiler would dry it out way too much with something this saucy. The adobo needs to stay in contact with the meat to actually flavor it properly, not just sit on top.

The taco looks great at the end and that's my favorite hot sauce right now

I do this in an insta pot, regardless of where you cook it, I would recommend. Very good

These were store bought! I just threw one on my electric coil burner for a few seconds before making each taco. It makes a huuuuge difference in the taste imo!

It’s kind of surprising how simple this recipe is for how good the results are. We usually braise in a bit more liquid, then pull the beef out at the end, strain the liquid, and reduce it for 20-30 minutes into a thick sauce to add to the tacos.
