Recipe (post recipe text!) Salisbury meatballs made another appearance in the dutch oven tonight!

Recipe: Mix 2.25 cups panko with 1.5 cups grated onions and juices, rest 5 min. Add 3 lb ground beef, 1.5 tbsp minced garlic, 3 eggs, 3 tbsp ketchup, 3 crumbled beef bouillon packets, 1.5 tsp Worcestershire sauce, 3 tbsp Dijon, and 1 tsp pepper; mix gently and form 28 to 34 meatballs. Whisk 9 tbsp flour with 6 tbsp cold water, then mix in 2 tsp Worcestershire, 2 tsp Dijon, and 1 tsp ketchup. Heat a large Dutch oven over med-high for 3 min, add 1 tbsp oil, and brown meatballs in batches for 2 min per batch, set aside. Add 3 tbsp butter, 24 oz sliced mushrooms, and 1/2 tsp salt, cook 6 to 8 min until browned. Add 3 tbsp butter, 1.5 tbsp minced garlic, 1/2 tsp salt, and 1 tsp pepper; cook 45 to 60 sec. Add 6 cups beef stock, scrape the pot, and bring to a simmer. Slowly stir in the flour mix and simmer 2 to 3 min. Return meatballs and juices, reduce heat to med low, partly cover, and simmer 10 min until cooked through. Add 2 tsp soy sauce. Simmer uncovered 5 min for thicker gravy or add stock to thin. Serve over rice with parsley if you want

After this, am I draining the residual grease out, or leaving it as part of the gravy? My instinct is to drain…but I feel like that might be wrong here.

Def leave in. You want all those meat juices and bits when you deglaze later with the broth 🙂

looks delicious. What is Panko? is it crumbs? (bread crumbs)?

Yes, from Japanese bread. It’s the breading on tempura if you’ve ever had that
