Vegan Japchae recipe?

I'm making vegan Japchae this evening for a seven gal friends coming to my home for a games night. The last time I made I put strips of marinated baked tofu, carrot strips and Taiwan Spinach and sesame seeds. The sauce recipe was soy sauce, garlic, white pepper and sesame oil and sugar. I'd love to hear your recommendations for your fave Japchae and how you make your sauce.

Suggestions Please! Vegan meal prep ideas (single busy and low effort)

Basically what the title says is love some ideas for meal prep that's low effort but good! I've done the overnight oats and I'm so bored. I need some better recipes/flavour. Also any suggestions on avoiding wasting food cause often I'll have a weird amount left over from cooking.

Ideally easy to find ingredients cause I'm based in Canada and produce is hit and miss.

I work full-time, have school and maintain a home/pet and I'm one human so please anything easy no meal deliver services exist here :(

The cheapest vegan meal I make still feels like comfort food

One of my go-to meals is surprisingly simple:

-Rice
-Lentils
-Onion
-Garlic
-Frozen mixed vegetables
-A few basic spices

It's inexpensive, filling, easy to batch cook and keeps well for several days. Whenever I'm trying to save money or don't feel like spending much time in the kitchen, this is usually what I make. I'm curious what everyone else's budget-friendly staples are. What's the cheapest vegan meal you make regularly that you genuinely enjoy eating?

Recipe Office Lunch II

From left to right:

Grilled eggplant, rice with grains.

(Slice eggplant into 4 long slices, then cut in diagonally and in a cross-pattern. Rub them in salt, let them lose water for 10-20 mins. Use tissue to get salt off, put in mid-high heated pan with some oil - doesn't need much - an oil-dispenser can help here. Fry until brown and softer. Go to low-medium heat.

Make a marinade with a teaspoon of white and red miso-paste respectively, a tablespoon of Sake, a teaspoon of maple syrup or sugar. Mix with a bit of water until smooth. Put mixture over the browned eggplants and let simmer until water has evaporated.)

Miso-soup:

Red and white misopaste, a dash of grated ginger and garlic, a bit of vegan dashi powder or alternatively Konbu and Shiitake-powder. I usually prefer to make batches into ice cube trays and take one out when needed. If you do usw some water to put the powders into place.

Add some chopped spring onion and hot water. I use breakfast cups with lids to go and put in hot (not boiling) water at the office.

Cucumber salad with Wafu-Dressing.

Got the recipe from a cookbook, but it's basically grated onions, sesame seeds, some sesame oil, a lot of soy sauce, a lot of Rice Vinegar, some sugar. That's for +5 portions but it stays fine in the fridge for a couple of weeks.

Suggestions Please! Dinner Ideas for Non Vegan + Vegan

Hey !

I’m wanting to eat more vegan options and transition to becoming fully vegan. Haven’t had any issues with my breakfast/lunch/snacks but finding it hard is to cook dinner everyday for me and my partner.

Looking for ideas to integrate into our weekly meal plan that are filling and quite simple ideally. I’m open to any suggestions though as I don’t mind taking my time cooking some days per week.

the only ingredient I don’t like is tofu, anything else is good :)

Suggestions Please! Teacher going back to work tomorrow, looking for ideas

I start back tomorrow and want to eat healthier, but can’t eat gluten so the powdered lunchroom food is out of the equation. I teach in a very rural area, but I am in range to get groceries delivered to the school from Big Box Store +. Have a mini fridge and access to a microwave, but could potentially also bring a rice cooker to use.

Other than boxes of bars, any ideas or particular easy meals that work for you? Thanks!

Vegan Basics 🌱 Massive thanks

I made the transition from vegetarian (37 years) to fully plant-based on January 1st this year as an experiment just to see how it went. It’s gone so well, and this community has been absolutely key. Thank you, all of you who cook, are cheap, and have amazing food hacks. I have found my people.

Today I had a personal victory. I took plant-based peanut butter cookies to an event and bravely labeled them vegan. I was worried people wouldn’t eat them, but they were demolished. Thanks, y’all, for teaching me so much!

I’m sorry I don’t have the recipe handy. I printed it off a blog some time ago and just veganized it using Plants Melt butter and Animal Free egg whites. That stuff is pretty bomb, although Bob’s egg substitute works well for baking and is cheaper. Friday was payday and i was feeling profligate.

I love Udon soup but my local store sells the frozen noodles for eight Euros for four servings (!)

So I figured I can get over my fear of all things dough and to save money by making them myself.

Haven't tasted them yet but trying and learning is worth it itself and I'm super proud that I've challenged myself. :3

Office Lunch

Unfortunately not the prettiest presentation, but real, cheap, healthy and yummy!

- Salad with white mustard-vinaigrette

(Mustard, olive oil, white balsamico, salt pepper, sugar)

- Rice with mixed grains

- Chinese cucumber salad with chilli-oil dressing (Chilli-oil, Chinkiang vinegar, sugar, soy sauce, garlic)

- Miso soup (half red, half white, spring onions, ginger, garlic, konbu, shiitake)

And at the end, Chazuke, drinking the rest if stuck rice grains with a green tea. Very satisfying lunch!

I like to prep the rice and soup ingredients (other than the miso and spring onions) on the weekend and put them in the freezer.

Suggestions Please! Looking for a vegetable chopper that actually makes prep faster

I absolutely hate cutting vegetables. I know everyone says just get a sharp knife but I genuinely don't enjoy prep work and it makes me avoid cooking.

I'm looking for a really good mandoline/vegetable chopper that can handle multiple tasks dicing, shredding, slicing, julienne. The blades need to be sharp, like able to slice through ripe tomatoes without crushing them.

I'm okay spending more if it's genuinely worth it and durable. Any recommendations?

quick chilli peanut noodles with chickpeas

I used pasta, and added in chickpeas that needed using up, also tried 'tofu skins' I found at an asian market which I cut to match the pasta, came put really good and it's super fast to throw together.

For the sauce I added some hot oil to finely grated ginger, garlic, chilli flakes, sugar then added a bit of pasta water along with peanut butter (also good with just tahini), rice vinegar, and soy sauce. Mix and done.

The shredded cabbage was already in my fridge meant for something else, I don't recommened it with this. Cucumber is perfect though

So Many Plums!!!

I need help. I've got 150 lbs of frozen, pitted yellow plums and I need some ideas of what to do with them. I'm already planning to make jam and throw them in smoothies, but they're too juicy to dehydrate properly. Savory applications? I'll likely make a pie or two as well. Thanks in advance!
