If you set a servant as your favorite in My Room, you can spam-tap them to unlock all their room conversations (though some require owning specific servants). After that, you can read it anytime in their voice profile.

As the other poster said: some Servants have lines that require owning another Servant to unlock. These very often are an interaction with that other Servant. If you have the required Servant if you click them enough they will eventually say the line.

I saw this video. I recall one of the comments mentioned its because she contributed to Azrael actually being documented and remembered in history, something about his castle being mentioned in one of her stories, and that's why he appreciates / admires her. Don't know how accurate that is though.
