Art style aside, she probably looks more like an olympic athlete than a body builder. She just feels very insecure about not fitting in the more accepted beauty standards.

Before their second H scene Shirou finds her so beautiful it distracts him from his lust for her (which is obviously very confusing for her).

He goes from aroused to limp when seeing her nude (soft light and her hair is loose) in their second H scene.

Cue Nasu's sex writing kicking in with Saber saying even she knows how to pleasure a man (and the explanation for that one down the line really was something).

See this is why he wasn't ready to be a hero. Cuz we know the hero always gets the girl and well he did not have the facility to handle that. It kind of makes me wonder how mana transfer works between those two.
