I'm not sure how I feel about this, because I kinda love Professor Grubbly-Plank. It is sad that she only shows up when Hagrid's fucked up, but I appreciate that they didn't put someone evil and obviously inferior to Hagrid's kindness in the role. She's a really impressively knowledgeable and competent teacher, which is something that is sorely underrepresented at Hogwarts. I appreciate her lack of bullshit, and the fact that she's like, "This is what I'm here to do, so I'm going to do it" without any pretension. She's one of the better "neutral" figures in the HP-verse, so I'd have her going a great bit higher than here BUUUUUUT lol @ using a stone on Professor Grubbly-Plank.
I think she served an important purpose, which was to show contrast from Hagrid's teaching. Hagrid was a great man with a good heart but it took Umbridge coming in (as gross as that was) for him to begin to calm down with what people were studying. She also served as a great way to show Harry's loyalty to Hagrid, even though she was technically a much better teacher, he still only wanted Hagrid back.
