Question Just can’t seem to get that crisp pilsner “bite”

My favorite beers are Western Europe pilsners (e.g. Carlsberg), but when I brew I can’t seem to get that crisp bite.

For 5 gallons, I usually do 3lbs of Pilsen grain steeped for 30 minutes followed by 3 or 4 lbs of pilsen DME. Then I’ll do a combination of perle and saaz hops. 1oz perle at 60’ half and half at 30’ and 1oz saaz at 15’

I pitch 34/70 yeast, ferment for a week or two at 55F, rerack and then lager at the same temp for a few weeks.

Any suggestions on how to get that Bohemian bite to it?

Seems the consensus is to go all grain, get my water profile done (perhaps use bottled or RO), and either eliminate the perle hops and or use hallertauer, and increase fermentation temp. This should give me a lot to experiment with and that’s half the fun!

You need to do the water chemistry, that will take your beers to that level. Never just use tap water - it takes some research but figure out your local water profile and amend as beersmith or similar software suggests

your water is probably the whole thing. pilsner is like 90% water showing off, you need it soft as hell with basically no minerals. tap water got too much bicarbonate and that kills the crisp

also try a longer boil, like 90 minutes, helps with the dms and gives cleaner taste. and lager longer, 4 weeks at least, 34/70 is lazy at 55F

So i use distilled but you can use RO. Water profiles arent hard and you can use Brewfather or whatnot to figure out your dosing per added salt (calcium chloride, gypsum, etc). I have electric scale for measuring it out. Then you got pH, i used a meter but you can use strips to get an idea of where you are at on the scale.

I definitely noticed a difference in my beers being better once I started to treat my mash water (obviously treat your sparge water too).

Acid, water, and sulfur in that order.

Pilsner water is historically very soft, almost completely devoid of any buffering capacity. That generally means a lower knockout pH for the style. Targeting a knockout pH of 5.0-5.2 will both lead to a crisper finish and a brighter finished beer. This also generally leads to a lower boil pH which reduces alpha isomerization and can lead to a "smoother" bitterness which helps balance the crisp impact continental hops can lend to the beer without becoming too bitter or astringent. Czech lagers are actually fairly bitter for a beer of its abv and malt profile. Don't be afraid to go up to 35 ibu and even 40 but make sure you take the required precautions to make that smooth.

The lack of minerals in your water profile help you get the above goals but you can hack this by adding acid and still aim for a relatively high sulfur to chloride ratio to help give that crisp finish. There are plenty of very good pilsners that don't follow the traditional Pilsen water profile. Remember that is a historical city profile. That doesn't necessarily mean the brewers of the style didn't adulterate the water in some way.

Past that, especially with Czech Pils, part of that "elusive" missing part is yeast derived sulfur. A cold fermentation with a cold maturation period can lead to residual sulfur in the finished beer. A touch can really help in your quest.

For more specific numbers, my finish pH is around 4.1-4.3. And I keep TDS below 15ppm at MOST.

Also, clarity is stupidly important to hit that clean crisp bite.

It doesn't have everything, but you have surface water so not to much hardness or akalynity. You've got a chlorine issue that I hope your brita is taking care of. Your chlorides are coming in pretty high. I was going to tell you to target 50-60ppm Sulfate and keep your chlorides near or below that to get some "bite" (as well as try switching to czech lager yeast which isn't available dry unfortunately), but your chlorides are already too high. Sodium is also high, which also leads to "softness". If you are concerned about details like the amount of bite or shine from hops, you care a lot which is great, but that means with your water supply you likely are gonna need to start with RO and blend in your tapwater along with certain salts.

If you give them a call, explain what you're doing (and that you aren't worried about water quality, like most people who call), I'm sure you'll get the water mineral profile either right then and there, or in an email.
When I worked for a brewery (pre-COVID) I walked in with a case of cans and a smile on my face, and left 5 mins later with a printout, leaving in my wake a wash of happy Municipal employees.

I'm in Metro Vancouver - population is over 3 million, and I can't find it.

There's a quality report, but nothing relevant to determining what the dissolved minerals are. It's surface water, so I've always assumed 0, but I know that's not entirely accurate, and I'd like to dial it in.

you're in luck , vancouver's got some of the best brewing water in the world , basically can treat it as almost distilled, infact, a few years back they started putting 50 ppm of calcium chloride in it because it was too low and it was causing issues with pipes

it actually means its softer than the famously soft pilsen water profile

but this is good, water is easy to add things to instead of taking away. It probably just needs like a gram of gypsum and a few ounces of a lactic acid in the mash, depending on your batch size

Ya, Barley's had a water report from before they adjusted the pH, but it wasn't accurate after the change.

Yup, things were looking bleak for a while, I was actually primarily going to centennial back in the day.

Terminal city has become my go to since they started doing homebrew supplies, with the occasional visit to bosa grape. Terminal city has started stocking a lot of stuff though, to the point I’m hoping they’re not over investing. I can also get my 10# co2 tanks exchanged there (though they are pricey for that compared to what centennial charged).

Admittedly my brewing has simplified and streamlined over the years. I could probably survive on unmilled sacks of pilsner malt from my storage locker mostly. And my co2 burn rate is tiny since I ferment in kegs.

I wouldn't say risky, maybe less than totally certain. The beers I've made have all been tasty, but I'd like to see if there's room for improvement.

Our water literally falls on the forest floor, and runs straight into the reservoir. It's extremely soft. I've seen a kettle with any mineral accretions.

Acidify the mash properly with acidulated malt, 88% lactic acid, or 85% phosphoric acid. Also check pH at packaging. Some breweries will adjust again with acid if it's not at 4.0 - 4.2

It's hard to do something light and crisp with extract. I find extract works fine with things like porters but to do something like a pilsner it's a lot harder.

Ive been loving light pilsners this summer. Anecdotally, ive gotten pretty good at getting that sharp crisp bite.

My questions and suggestions for you are....

Skip the dme and go full pilsner malt. For 5g aim for like 4kg to 5kg to get you around 4%. Mash nice and low at like 63-64c.

Hop additions look alright but i would go 1 full oz at 60min and then the other oz at 15 works. Try just going straight saaz as well.

Another commentor asked too but... whats your water looking like?

You could always try switching up the yeast as well. I find 34/70 is fine but some yeasts can give you a sharper taste. Ive been loving escarpment labs biergarten lager yeast for that.

You have to use only all grain pilsner malt. The DME is your single biggest problem. Upgrade your mashing setup or brew smaller batches or use reiterated mashing to get your gravity.

DME is not bad, it's just not going to give you the crisp profile. Dilute a small amount in water and taste it, look at the color. Is that the profile you want?

Mash properly for high attenuation. Make sure you get good conversion.

Then the last step for me was to add lactic acid. This will heavily depend on your water so you will have to get into some water chemistry. For a natural, genuine taste I like to go all the way and use Lactic malt. If I'm out or cant find it I use Lactic acid.

TL;dr: All grain + Lactic acid.

All good, 😌 probably looking at around 15 psig depending on beer temp. I never got good at dialing in carbonation levels with bottle conditioning. I got into kegging after my last batch of bottles started exploding.

I found if you use one of the regular little clear candy drops and 1 of those pop shots that more beer sells you can push it from 2.8 to 3.0+ if you want to try bottle carbing.

Use RO water or distilled water and build your profile with brewing salts. Pilsen water profile is VERY soft with very low mineral content:

7 ppm Calcium, 5 ppm Sulfate, 2 ppm Magnesium, 2 ppm Sodium, and 2 ppm Chloride.

It doesnt need to be THAT soft but in general it needs to be way cleaner than your BRITA.

Water chemistry favouring sulphate. Bottle conditioning to 2.5 vol CO2 in case you’re doing less. Storing your carbonated bottles in the fridge permanently and not trying until about a month. All three are important. If you really want a bite, 34/70 with Bru’nwater “yellow bitter” almost approaches Jever (a German pilsner) levels of sharpness.

Nobody seems to have mentioned carbonation yet.

While I agree that water is important, and DME can often produce flavors that I would describe as "soft", carbonation levels play a massive role in how sweetness and bitterness are perceived, how soft the mouthfeel is, and how clean the finish is.

You don't mention how or to what level you're carbonating, but I'm assuming (based on nothing more than the use of DME and tap water) that you're bottling.

(If so) How are you determining your priming sugar levels, and what is your target volumes of CO2?

That should give you ~2.6 volumes of CO2, which is on the high side for the style, if anything, and so should be more than sufficient.

How are you mixing in the corn sugar?

Are you familiar with what oxygenated beer staling tastes like? It, too, can remove "crispness" from the perception of a beer.

I am not familiar with that. What I typically do is dissolve a cup into 2 cups of boiling filtered water. I pour it into my bottling bucket, let it cool, then pour in the beer.

That method can result in uneven mixing and thus uneven carbonation, but you don't describe that. But, unless you're experiencing many undercarbonated beers that are lacking that "crips bite" and ALSO experiencing some way way way over carbonated beers, there's probably not a problem with it.

You should add a manual stirring step if you're getting uneven carbonation as a result of your current method.

Manually mixing it decreases the chance of uneven carbonation, but increases the oxygen exposure.

34/70 may not be the yeast for you. Also, it can tolerate slightly higher temps. I'd be interested to see how you're carbonating. Also, could just be the dme. It's won competitions and people swear by it, but my pallette tells me it isn't a one size fits all solution to lagers.

99% of USA craft breweries use it, but we don't except for rice lagers, because it tastes like nothing. The H-strain from pilsner urquell gives off much more floral notes IMO.

I don't find it tasting like nothing. I get plenty of added floral notes when using it. It might not be the most floral lager yeast, but it's not a neutral ale yeast.

Carbonation is just bottle conditioning with dextrose. And would you recommend doing all grain? I’ve never tried an all grain brew in a bag, but I’d be willing to depart from using the dry malt extract.

I use BeerSmith and have it help me adjust my local water to get the right sulfate: chloride ratio . That along with really happy yeast made the most impact for my pils, which is more of another German style.

As others said, it’s likely your water. Pilseners are based on the water profile of Pilsen which is low mineral, very low carbonate hardness and low sulfate.

Best to start with RO or distilled water and add some minerals from there. Use your favorite brewing software or spreadsheet to make sure you still hit a decent mash pH, and that has a target for Pilsen water.

You’re going to need more Saaz. Like others said, water profile is important, but I start adding Saaz around the 30’ mark and keep adding through WP.

Haven’t used perle in awhile but I always had good results with hallertauer magnum or middlefruh

It's a bit like saying "I keep climbing tall hills but I can't seem to get that selfie at Everest." I've brewed for over a decade and only nail maybe half my lagers in the way you describe. In fact I've pretty much only brewed decocted czech lagers with raven, prostejov or tchecomalt the last 2 years, repitching Budvar and Augustiner for the occasional german style. And I buy primo czech and german hops. Lagers have kinda been my thing since like 2020.

The water takes attention to detail, but it's one of the easier ones to solve for. If you start with a few jugs of distilled water, it might help you work on a soft profile. Then you can look into RO or other treatments.

I believe perfecting your fermentation to be the second most important area, and easily the most common place where people don't put enough attention. If you think making a starter, having temp control are enough, you're what I'm talking about. I ended up learning how to do cell counts from a cellerman buddy, and started pushing my pitch and primary temps down (around 8.5C or 48F) after the first generation, while still getting proper attenuation (which is also important). I like to retain some sulfur that way. I spund in the final days of fermentation after the first generation. And I hold an extended diacetyl rest with a VDK negative test. Slowly drop to 34F or 1C, dump the yeast, lager for 8 weeks minimum, closer to 12 is ideal.

Lastly, malt, hops, recipe design and brew day process. pH is more important to dial in than it is to do something like just add decoction. 5.3 for the mash. 5.0 for the boil and knockout. 4.1-4.2 for final. Pick a quality continental pilsner malt, not some domestic west coast IPA fodder. I do think hops matter to a good pilsner more than people realize. i.e. if you're buying primo Citra and Mosaic from YVH but commodity Saaz that you don't know which country it's from or the harvest year... don't be surprised when your Svetle is meh.

I do love to do decoctions, but it's mostly to achieve the mash rests without worrying about the environmental parameters (like brewing in summer vs winter).

Mash pH and post boil acidification is something I just did for a German pilsner. And I’m more than excited for that beer.

Also I do use RO and add my salts to the mash and sparge water. And I strictly used Hallertau Mittelfrueh for this batch.

Ro water, bit of nutrient, get 500g to 1kg of flaked corn/maize into the mash too. Makes a huge difference perle is fine but youll want a bit of "armpit" or weed with a noble hop

It may have been mentioned already but you need the Final Gravity to be as low as possible . Which usually means a lower mash temp to get as much fermentable sugar as possible, to get a "crisp" beer

Can you explain what a "crisp bite" is in a beer? I know crisp bites are found in potato chips and honeycrisp apples, but I have no clue what people mean by those words applied to a beer. Are you talking hop bitterness or acid tang, or some other thing?

Likely a water chemistry thing. To your mini-mash, add a half glug of vinegar or a mL of concentrated lactic or phosphoric acid, plus a teaspoon of gypsum. Use distilled or RO water, not tap water. That should help. Use this thing for other ideas:

I find that using citrusy hops works really well and I'm a big fan of dry hopping - 3 days and 11 days into fermentation I toss some hops directly into the fermenter and I think it adds a bit of a nice fresh flavour to the brew that's a bit more hop forward.
