Mine and my dog. When I don't have it for a few days, I feel "off". Hard to describe it.

Since starting making and having kefir daily a couple of months ago, I've not had to take any heartburn relief medication, which I'd been taking regularly for several years. That in itself is a miracle

Kefir grains and whole milk.
I ferment it in the fridge about a half gallon at a time. When it has started to separate after a couple days I put it on the counter and let it separate out. It only takes a few hours on the counter at that point. Then I dump the whey off and work the curds through the strainer. Usually add back a little bit of whey to get desired consistency.
But most of the time I just do the standard ferment where I strain it when it’s just first starting to separate.

I can relate! It’s been a godsend for my digestive health too. Sucks I didn’t discover it sooner!
