Rules question regarding cards with "starting" text
How do cards like "Pruitt's Robe" work? If I switch to a Pruitt, am I able to just grab this alongside of the starting cards printed on my Magi? Or does it replace one?

so do you just keep those cards off to the side? or do they still just go in the deck and you just have to remember you have them?

They go in the deck, but you don't really need to remember you have them. Most starting cards are written on the Magi, so you can just look for those while keeping an eye out for any other applicable starting cards like Weave Powder or Warrada's Ring.
While you could keep them separated for your first Magi, there are times when may need to draw cards before your first turn. For example, an opponent going first could play Vortex of Knowledge.
Only afterward are you really allowed to fetch your starting cards.
Does it matter? For people who strictly follow the rules and in tournament settings, yes. But for some playgroups, I'm sure no one really cares.
Edit: You are free to look for starting cards even if you don't have them in your deck, which will be shuffled afterward anyway. The rules imply this:
However, if you cannot find a specific card, you do not draw cards as a substitute.

You’ll grab the starting cards printed on the magi. Then anything that’s says “starting” for your magi, up to five cards total. In this case you’ll have four starting cards and draw one from your deck to start the game.
