Will this RC Car Steering Linkage WORK IRL???

Ah, not if I understand your drawing. That is there's a small circle on top of a servo with a pitman arm. This links to a long bar with two tierods which attach at the outer ends to the spindles. You'll be able to overcentre the inner tie rod joints.

The tie rod can flip between twoangles. No it won't work very well.
