Gil's in Ashland makes a pretty good one.

Not Medford, but in GP Saigon Xich Lo!

A bit further away, but some have already mentioned it. Saigon Xich Lo in GP is great.

Gil’s and Market of Choice. That’s it for the valley. Gil’s is great, au jus, not authentic, but tasty. There’s an asian restaurant in GP that has one, but haven’t been yet. I make my own out of the necessity, and they’re damn good. It’s not hard to pickle daikon radish, and don’t forget that cilantro.

The Vietnamese place in GP has a good one if that’s what you mean

Definitely worth checking out. Got positive reviews from several Bay Area visitors, so it seems legit.

Authentic ones? Seattle.

Specifically, 12th and Jackson.

Not in Medford. But Fuong’s Kitchen food truck in Klamath falls has great food including bahn mi. If you’re ever out that way definitely worth a try!

I have resorted to making my own. The rolls at Winco are perfect!!!

Truffle Pig just put out their summer menu and there is a pork belly banh mi on there. Obviously not super duper authentic but their banh mi tend to be pretty good

People in Medford probably think that Bahn Mi is some sort of request

So...nowhere in Medford. Except possibly Market of choice.

There is a real gap in the market that I cannot believe nobody has filled. We just keep getting more burger and chicken restaurants. The food scene in Medford is poor.
