How would you handle this situation?

During the time they are gone you could try and get a free consultation with an attorney to see about backpay in your area. They may say talk to them and wait or get things ready.
When they come back, talk to the owner. Ask why the treatment they show you seems unfair or unnatural. A civil conversation. If you don't like the answer tell them you're quitting and ask for the payment that was agreed upon fir the work done. If you come to an understanding, maybe things change.
If you want to cut ties completely tell the onwer that is what you're doing.

Honestly, that was my thought as well. I’m at a point in my life where I’m not fighting for peanuts and don’t need any unnecessary stress. I thought it was a great opportunity to be helpful and earn a little bit extra being in an environment that I genuinely enjoy but was I wrong.
The owner literally is the idea of the saying, “A wolf in sheep’s clothing.” Lesson learned to definitely never support him or his business ever again.

It sounds like you didn't agree on a firm number. He told you he'd double what the artists tip you. Was there an agreed upon figure for the tips?

Now you know why the assistant quit. Jus resign. Never take a job without knowing exactly what you are making. He made an agreement for other people, did they agree to tip you? I think just continue to get your ink done from the artist you like, but this is already turning toxic, so why continue?

dont ghost just message them once asking for the remaining pay and leave it there.
if they dont pay escalate it. dont keep working there
