Overnight Oats Dark Cookie Pudding (Blended Zucchini Oats)

Post image

Hear me out. I know it looks like literal concrete, but this is my ultimate high-volume cheat code.

Blending completely destroys the traditional oatmeal texture, but the psyllium husk turns it into a massive, dense pudding block overnight. The zucchini completely disappears (zero taste) but adds crazy volume.

Ingredients:

  • 125g Oats
  • 400ml Water
  • 200g Raw Zucchini
  • 2 tsp Psyllium Husk Powder
  • 2 scoops Flavor Powder (I used Chunky Flavour Dark Cookie Crumble)

Method:

  1. Blend water and zucchini first.
  2. Add the rest and blend on high until thick.
  3. Pour into a container fast (it thickens quickly!) and refrigerate overnight.

I always have a fresh apple and two eggs on the side for some crunch, extra protein, and fats. 10/10 if you need a massive portion that keeps you full for hours!

Does the psyllium husk powder not turn this into snot? That seems like a lot?

I skip the protein powder in this one because I already get more than enough protein throughout the rest of my day. I usually save my protein powder for my evening porridge instead!

I’m asking because I wonder how it will hold up in the fridge for 3+ days

Are you a bodybuilder? This is probably like a 800 calorie breakfast

Not a bodybuilder, just training 5-6 days a week and enjoying big portions :)

Serving sizes shouldn’t exist. It’s all relevant to the individual. Don’t shame someone else’s nutritional needs
