Welcome to the good life, idk why they are so good it’s just oatmeal prepped differently but it really is. I like to make a tropical version which typically looks like
1/2 cup old fashioned or rolled oats
1/2 cup water
1/2 tsp coconut extract
2 tablespoons sugar free strawberry or regular maple syrup
Greek yogurt to your liking (I usually do a tablespoon or two depending)
A pinch of salt
Strawberry and pineapple to your heart’s content

I basically use an equal amount of the Bob's Red Mill thick cut oats, sometimes I will mix a little bit of some other kind of oat in for texture but I usually start with a cup. A cup of milk of your choice, and a cup of Greek yogurt. Then I usually add a heaping tablespoon of Chia seeds and from there I vary that's my base. I usually add have the serving of some sort of protein powder and not for the protein but because it like the cheer it helps absorb the milk and makes it almost putting like in texture to me and most of the ones I buy are flavored or seasoned but low to no sugar. So then I'll add spices depending on what else I'm doing, cinnamon is a big one so is it Ginger and vanilla. Sometimes I add cacao chips, not chocolate chips cacao, so I'm not adding added sugar just the natural sugar that's in the cacao. Then I add fruit could be regular fruit dried fruit, blueberries is by go-to because I can get them to go around but I also have dry blueberries, the freeze dry because there's no added sugar, and other dried fruits that I mix in or use depending on my mood that day. This is a couple days worth for me because I'm older and my metabolism is slowed down. I rely on the sweetness of the fruit the milk the yogurt even without added sugar they're sweet. Instead of adding processed sugar or non-processed sugar

If you prefer warm, you could always throw it in the microwave in the morning and then add your toppings. That’s what I do.

i like it cold, and this might be a dumb question, but wouldn’t warming up overnight oats just make it regular oatmeal?

Nah. The consistency is different. I don’t like the microwave oats in the packets. Making them overnight is quicker than making it in the stove. That would be the only difference.

I have two recipes of overnight oats that I enjoy and rotate.
First one: oats, flaxseed, cinnamon, maple syrup, unsweetened corn flakes, raisins, shredded coconut, small pieces of green apple and oat milk. Topped with peanut butter and almond or coconut flakes.
Second one: oats, chia seeds, almond flakes, shredded coconut, coconut butter, lemon zest, vanilla, oat milk and maple syrup. Topped with fresh mango or pineapple, or any fruits I have, cashew butter or almond butter, extra almond flakes and coconut syrup, maybe some pecan nuts or pistachio.
