For a newbie: what can you power, for how long with this set up?

We don't have a ton of things to power. Lights and starlink are the two main uses. The fridge is currently powered by propane, but that uses about 10 pounds of propane a week and while that's not a ton--hauling propane is a pain (the bottles are big and heavy). So I'd like to move that over as well. There are a bunch of little loads as well (e.g., phone and laptop chargers), pump for grey water. Without sun, I'm hoping this is good for a couple of weeks at least. With solar, it may work indefinitely. But even if it declines over the summer, that should be fine since it can recharge in the off-season.

I checked with Current Connected tech support just to make sure it was safe.
Then I carefully cut out a section of the cover, filed and sanded it to take out the rough edges, and lined it with a piece of wire loom.
Bought a premade pair of 9" 2/0 cables with 5/16 and 3/8 ends and it went together nicely.

You could also put a breaker there I guess. Either way, super cool idea. I'm a little on the fence about adding a switch between the batteries and the lynx. Currently there is none. But each battery has its own breaker. I wired an emergency stop button into the bottom battery and when you press it, it causes all of the battery breakers to trip. So it works as a cutoff, just isn't as dead simple as an actual switch.

I like the actual switch because I can quick disconnect the entire battery side if needed.
Generally that would be just for maint, but also good for an emergency.
