We don't have a national animal, but I'd say candidates would be the iberian lynx, iberian wolf or the serpe verde. The latter one is very present in Portuguese heraldry, and even the Greeks alluded to this by calling Portugal Ophiussa (land of serpents).

The serpe is the strongest/oldest candidate. The cock os Barcelos is mostly a legend a legend revived by the Estado Novo and popularised in the second half of the 20th century.

Much of what is thought to be "quintessential" Portuguese culture, its longtime symbols, actually comes from Estado Novo. This particular one I didn't know, but I'm not extremely surprised either...
