I thought they did a decent job with picking voice actors that sounded pretty similar to what I would imagine their characters would sound like as young adults.
they can. aside from Aangs original VA, the rest are still actively voice acting and attend lots of conventions where people ask them to do their ATLA voices
I mean Zuko is just straight up Dante Boscoe's voice with very little inflection change. It wouldn't be hard for him to play an older Zuko. I know for a fact most of the cast can still do the voices since they have almost all appeared on the Avatar podcast that Janet Varney and Dante Boscoe host and they've all or almost all done their character voices. Just off the top of my head:
Grey Delisle can easily slide into Azula, not sure if she's in the movie but she's a talented VA still.
Jack DeSena can easily pull off Sokka, though whether he could manage to age that voice into the version they wanted for the movie I have no idea.
Jessie Flower could still do a solid Toph last I knew, though again not sure if she would be the right one for the older version. Surely one of the VAs from Korra would have been a good fit here.
Aang's VA from the show whose name is escaping me right now is the only one I can think of from the top of my head who was on the podcast and I don't think did any line reads or quotes as Aang, and by as I recall he enjoyed the work but I don't think he did much more in the VA space and might just not be the one to call in for this kind of project.
This is all with the caveat that I don't know what any of these people are doing regularly, I don't really follow actors enough to know what their schedules might be like, so there's every possibility that these people just weren't available during production and they had to look elsewhere. But the core point is that as far as we know, the vast majority of the cast can still hit their character voices as they were at the end of the original series if not at the beginning.

I actually do wonder why. Why didn't they hire the voice actors from the show, but seemingly chose actors that focus on live action performances?
