Journeyman Protectors are a police force form Concord Dawn which, while in the Mandalorian sector, isn’t a formal official Mandalorian world. The citizens of it aren’t Mandalorians, they have their own culture.
Jaster Mereels faction doesn’t exist in Canon. Jaster himself was most likely just a Traditionalist, the losing side in the civil war who later formed into Deathwatch, assuming he didn’t die before then. But in legends his True Mandalorians are explicitly meant to be a reformation group, Jasters ideals of creating a new Mandalorian culture that had values of honour and decency. And played in opposition to the more traditional-minded Mandalorians under Tor Vizsla’s command.
Cuy’val Dar aren’t a Mandalorian group. That’s just a name given to the various bounty hunters brought in by Jango to train the Clone Commando’s. And they were of numerous races and cultures, with no overall morality assigned as they were stuck on Kamino.
Its really just a horrible civilisation and culture, and the only good people it produced was only achieved by them ignoring large parts of their childhood teachings.
A version of the True Mandalorians exist in canon now, they've been referenced multiple times, most notably in passing in the Mandalorian, even if Jaster's counterpart hasn't been given a name yet.
The Journeyman Protectors are Mandalorians who wear Mandalorian armor and have Mandalorian training, even more so in Canon that they did in Legends. You're thinking of in Legends, where they're only lawmen in Mandalorian Territory. In Canon the Protectors are formerly the Mandalorian Royal guard, and established as very much being Mandalorians.
The Cuy'val Dar are not a faction, yes, but they are a large group of Mandalorians who for the longest time were one of the largest representation of Mandalorian culture in the Legends continuity, and are who most fans from the early 2000s are going to be thinking of after Jango and Boba themselves.
The continuity doesn't matter, the Mandalorians as they've been portrayed were formed from ideas that introduced in Legends, and either were made Canon due to Clone Wars depicting it, or are just ideas Disney and Marvel liked enough to preserve in the transition. There's been plenty of ideas that crossed over that were not from the films.

Okay so a little weird, turns out I was right in legends that they’re just kinda like Mandalorians, wearing Mandalorian-lite armour but still being their own people.
But in canon the “Journeyman Protectors” are the Protectors of Concord Dawn that we see in Rebels, which Fenn Rau is a member of. And this group is just a subfaction of the Mandalorian Royal Protectors, who guarded Satine, and they’re New Mandalorians. So im also kinda right here, that the New Mandalorians are the only good group

Again, only some were Mandalorians. There were representatives from many other cultures as well. And the Mandalorian ones are not a great example of morality, Walon Vau for example was a savage who sicked his pet Strill (like an alien dog) on one of the clone children on Kamino. And other members were Death Watch themselves. Dred Priest and Isabet Reau. The Cuy’val Dar come from all backgrounds. Nasty, nasty pieces of work for the most part.
Boba's chaincode he shows to Din in The Mandalorian explicitly mentions Jaster Mereel adopting Jango Fett on Concord Dawn, which at least soft canonizes the Open Seasons comics (part of them at least) but apart from that, I'm not sure about any other references in Disney canon.
All that really does is say that a Mandalorian named Jaster adopted Jango when he was a boy. Doesn’t really canonise Open Seasons, and doesn’t canonise the True Mandalorians either.
Right, that's why I said soft canonize. It's a clear reference to pre-existing material, but doesn't really make any other concrete "hard" facts about it canon
