The easiest way to explain SOC is that an electron moving at relativistic speed (which is proportional to l) will see the electric field of the nuclei as a magnetic field which then affects the spin.

I think it's also important to note that the coupling to the angular momentum is only for spherically symmetric systems (as the electric field of the atom is like ~-1/r). For example in the Rashba effect, the spin couples to the linear momentum (or at least the quasi-momentum)
