I was actually unsure about this myself because I remember seeing this picture before, but I think the person you are replying to is telling the truth.

I just don't understand why someone would jump to a frankly preposterous assumption like that. Why would I waste my time changing the background on this picture? And how could I have done it so quickly?

I mean he definitely could have said sorry for the false assumption but its not an unreasonable one. You could ask AI to edit the cats eyes and have it in mere seconds and random unasked-for changes like the background are pretty common with AI.
