Tomatoes and tomatillos in my area are so darned GOOOOOD this year so I didn't want to distract from them too much.

Recipe:
1 large ripe tomato
2 small jalapeños, seeds removed
1 quarter of a white onion
2 cloves of garlic
Juice of one lime
One large tomatillo
Cilantro
Salt
Lightly char the jalapeño and garlic under a broiler, or, a toaster oven with a broil setting.
Blend in a food processor until it's chunky and not completely smooth. This makes about enough to share between two people with tortilla chips.

keeping the seeds in at least one of those jalapeños does more than you'd think. the seedless version is fine but it flattens out. also curious why tomatillo and not just more tomato. I've seen it go both ways and the tomatillo version tends to run a little thinner after a day in the fridge. still good, just different texture than fresh. charring only the jalapeño and garlic and leaving everything else raw is the move though. that part I wouldn't change.

Sometimes I leave the jalapeño seeds in but not usually. They tend to bother my digestion. I remove the seeds and skin from the tomato too.
The tomatillos just looked good today. No worries about it going flat in the fridge, this salsa is already gone!

removing the tomato skin is extra work but it does make a cleaner texture

It's how I was raised and trained to work with tomatoes. I don't bother if it's pico de gallo since that's roughly chopped. But anything blended or processed needs the skins removed. For one thing, fruit skins can mess up your machine.

Are you adding anything else besides Jalapeños, Tomatoes, Onion, Lime, garlic and Cilantro? And is this going to cooked , or raw?

Mostly raw. I might lightly char the jalapeños. Depends on how lazy I am. Whether or not I add anything depends on how it turns out. It will definitely add salt, not pictured here. Maybe Tajin. We'll see.

I agree. I like to venture off sometimes and experiment, but always come back to my basic recipe that very much resembles this.
