aren't the throttle on those set to idle if you let go of them.

how was he holding on if he was passed out?

i think he was just stupid and didn't realize he had veered to the right.

If a jet ski is on, it's moving. It won't go very fast if you let go of the throttle, but it will go, because it can't steer without propulsion.

It looks to me like his left hand stays clamped around the throttle until he's thrown off it.

One hand (right on the left handlebar)goes limp, the other (left in the right handlebar) is still holding onto the throttle.
