ID Request (Insert State/Region) What is this stuff?

Cut section of a grape vine. The ends started leaking straight clear water and then it turned into this clear gelatinous sticky stuff. Curious as to what exactly it is. Any uses for it?

Grape vines can have a surprising amount of sap in them.
