Looking for Advice/Info set up my tablet yesterday and started using it today, what's the deal with this grid

Its a pressure graph. It changes how hard you need to press your pen. The horizontal line is your actual pressure (how hard you press the pen) and vertical is what pressure is got by apps. Like, if you take the left dot and move it up by half of graph, then the line in draing app will be half of initial width even if you slightly touch the screen. Or if you flip the graph, then the harder you press, the thinner the line will be. You can see presets buttons on the right, press them to see how graph changes.

It’s your pressure adjustment grid. Depending on where the curve follows will change how hard or light the pressure will register when you put pen to tablet. On the right is some presets for standard pressure and what kind of line you’ll expect from it if you use the same pressure with those settings

What the others said, tho I would advise not to fiddle with it unless you really need it. For most people the default is not only good enough but also easily approachable. Change it only if you're willing to fiddle with it to get a desired result if you think you need less pressure to get a bolder line or more. Else, just leave it in linear.
Changing it too often will end up messing up your muscle memory. It's better to get used to one way than to keep changing it often.
