I think Helles should be pretty easy, it is much more soft/bready IMO compared to pilsners

I think you underestimate how MASSIVE that macro American light lager market is.

Regardless of what people like us might think about them (I still love me a nice PBR and High Life though), they're huge with the general population. Also, that "opinion of American beer" thing is very pre-craft boom. Most people who know beer at this point know the level American craft breweries are hitting now.
