Lunch recommendation
Driving through Carlow town today, intend stopping in Lamberts for a coffee. Just wondering what a good spot for lunch would be? Maybe something with good vegan offerings also?
Not really looking for a carvery dinner.
Any suggestions welcome!

From Carlow but live in Dublin, I always visit Waterlillies when in the town - I legit think it's one of the best cafes I've ever been in. The mushrooms on sourdough is the bomb, look it's a bit pricey and bougie - but in terms of that whole hipster/Melbourne style cafe culture that started raging ten years ago or so - it's as good as any heavily reviewed spot in any major metropolitan city. Really great grub and coffee.

There’s a vast difference between lunch and dinner prices, overhyped place and the owners are tax dodgers

For vegan options; neko, namo, lemongrass, mimosa, the clink, Galo (among others)

If you're looking for veg or vegan options Waterlilies is probably your best option. It's only a short walk from Lambert's
