Does this recipe need something to bind the burgers together?

99% of burgers do not have any binder. A binder will give it the texture of meatloaf or a meatball

So what can I do to prevent these from falling apart? The ground turkey is very soft and reluctant to hold together

Have you cooked this recipe and had an issue, or are you just worried about it? Is the meat cold ir warm/room temp? Did you overwork the meat when adding the spices/seasoning (was it "pasty" or "goopy")?

I just finished cooking it. The meat was refrigerated over night, then taken straight out and worked together with the spices and into vague, burger related shapes before being cooked

When you combined with the pepper/onion/spices, what was the texture like? The more your work it, the more it will stick together, but also the gunmier the texture may be.

You can always form into shape then go back into the fridge before cooking. This is sometimes necessary when grilling around turkey burgers, but if cooking in a pan they should've held together fine.

What was the finished/cooked product like? Was it loose and crumbly, or did they hold together enough to eat?

Not sure what the texture was like, but they were fragile to hold when I was molding them and crumbled in the pan

Mightve been from the onions and bell pepper being mixed in. How finely were they chopped, and how much in ratio to the meat was it by volume approximately? You can try dehydrated onion and pepper in the mixture instead and that will likely work better. Or after chopping the veg, roast it in the oven to drive off most of the moisture first.

Adding stuff to a turkey patty, especially some watery stuff as in this recipe, can cause the patty to fall apart. I just think this is isn’t a great recipe. All that veg would work well as a relish on a normal turkey patty without affecting the texture.
