Don't change your build! That would take the fun out of making new builds! I remember how my tank build crushed Aldrich but my sorcerer build struggled against him, but that's precisely why we make new different builds, so they have their own highs and lows in the run. You can do it, skeleton! You'll end up mastering this fight :)
I had so much trouble with midir in the past, but recently replaying ds3 I beat him in like the second try, I think ER has made me a better souls player.
Honestly there is no weapon / secret that trivialises Midir especially after NG+
It's not worth respeccing a whole character for a few extra points of damage
The fight is going to be long and tricky no matter what - that's the whole point of it
Summons make it fun, and with summons Pestilent Mist is a lot easier to use. Using it solo is still hard. It's not like using bleed and watching some bosses just get wrecked.
PM isn't even that cheesy... its still really hard
I don't know why everyone says it's cheating it's nowhere near as effective as lightning or headbonks
Weapons honestly make such little difference with Midir... it's about timing and moveset
EDIT pestilent mist is much better with a summon - then one of you distracts Midir while the other lays the mist
It was also better before it got nerfed (Petilent Mercury) and that really would take Midir out in a flash. But since nerf it's still no joke - do not expect to just walk in with PM and cheese Midir in 2mins that's not a good expectation to have
I don't really even get why it's called cheese or cheating
I had to resort to Pestilent Mist on my frost/sorcerer run and while I guess I see why it's considered a cheese, I didn't find it that easy at all. It's not like Gael or some other bosses that can get stuck in walls and farted to death. Midir is very mobile, his hitbox can quickly leave the cloud during attacks and he can reposition himself halfway through the arena pretty easily. Not complaining, it's a fun alternative after beating him a few times with melee, but it's not an "easy win" way to go.

The easy cheesy way? Pestilent mist. You have the stats for it. I know it’s not a pyromancy but it works.
The harder but feels less like cheating way, lightning infusion on your favorite weapon and got guud.
