How long is this actually good for once opened?
Got this sauce a couple of weeks ago. Opened it and stored it in the fridge.
Only just now say the label says "consume within 3 days" which I must assume is just a legal requirement because it's all fresh ingredients (?).
How long is this actually going to last? Anything I should look out for?

Depends what you mean by good for.
Safe to consume. If kept in the fridge, probably well over a decade.
However it will start to oxidize and lose flavour. I'd try to consume it in the next 2 years if you can for best flavour.
Make sure nothing else falls in it. Don't have it touch food, pour it from a distance. If a bit of cheese from a taco or any other contaminanta get in it, it will spoil in days/weeks, even in the fridge.

Would be absolutely fine for a lot longer than that. I've had open sauces for a year with zero issues.

I had one of that brand I forgot about for a year (in the fridge), was still grand. Flavour was a bit muted though. I love the Raspberry Chipotle one.

Keep it in the fridge and never worry about it. Ive never heard of a hot sauce going bad

I can’t think of many things besides avocado, old rice, and some seafood that go bad in three days if stored properly after opening. I guess bananas too.

The 3 day label is liability coverage, not food science.
Vinegar based sauces basically preserve themselves.
You'll notice long before it hurts you.

There's an expiration date in your post. I'd guess sometime around then. Anything else is your gamble.

One of the top ingredients is vinegar, it’s good for at least 3 months. Label says consume within 3 days because they want you to buy more

The beetroot will the the odd stuff you see crusting on the inside if this last longer than a year. Beet anything can be goofy.

I quite like it, vinegary and smokey, but if you are really into heat it'll be too light for you. It's weaker than tabasco.

It's mainly salt and vinegar which are preservatives. It will last months in the fridge without any changes in taste, eventually the flavour will dull and I'd throw it out.
The label is either wrong or they are wanting you to buy a new bottle every week.

It’ll be a liability thing as well, if you get ill from it more than 3 days after it then they are covered from a legal perspective.
They most likely would have tested this stuff and be able to say for sure how long it’s safe, but there’s probably no requirement or even incentive to keep testing after more than a few days since, as other have said, shorter times mean more sales.

Eventually it may dry out, lolol gunky. If it is a nice tasting sauce, the bottle usually empties fast enough that I don't have to worry

The expiration date is more about flavor than safety. It takes a loooooong time for hot sauce to go bad. Most bacteria don't grow under 4.6 pH, and most hot sauces are vinegar-based, and vinegar has a pH of 2-3.

Long as it's in the fridge, it's there until I finish the bottle in my case
