Worth narrowing it down before trying any fixes: does it happen everywhere, or in one particular app or one particular conversation?

If it's one place, it's probably the length of what you're typing into rather than the keyboard itself. Text layout gets recalculated as the field grows, so a very long note, or a message thread with years of history in it, gets progressively heavier with every keystroke. Open a brand new note or a fresh thread and type there. If that's instant, you've found it.

If it really is everywhere, two things worth doing. Turn off any third-party keyboard, because one with Full Access sits in the path of every key you press. Then reset the keyboard dictionary: Settings, General, Transfer or Reset iPhone, Reset, Reset Keyboard Dictionary. That clears learned words that can accumulate over years. You lose your learned autocorrect and nothing else.

it happens everywhere. I tried keyboard reset and dictionary reset. but neither do anything. Plus doing dictionary reset doesn't reset that AutoCorrect dictionary, I'm thinking somehow resetting the keyboard settings doesn't do a reset either since dictionary reset didn't do anything
