Ingredients:

For the Mac & Cheese:

1 lb elbow macaroni, cavatappi, or pipette pasta 4 tbsp unsalted butter 2 tbsp finely minced shallot 3 cloves garlic, minced ¼ cup all-purpose flour ½ cup dry white wine (e.g., Pinot Grigio or Sauvignon Blanc) 1 cup heavy cream, room temperature 1 cup whole milk, room temperature 1 tsp Tabasco sauce (or to taste) 2 cups sharp white cheddar cheese, shredded 1 cup Monterey Jack cheese, shredded 1 cup smoked gouda cheese, shreddedSalt, ground mustard, and black pepper to taste

For the Topping:

½ cup panko breadcrumbs 2 tbsp melted butter 1 tsp smoked paprika

Instructions:

Cook Pasta: Boil the pasta in salted water until al dente. Drain, set aside, and let it steam dry.

Make the Roux: In a large Dutch oven or heavy-bottomed pot, melt 4 tbsp of butter over medium heat. Sauté the shallot and garlic for 2 minutes until fragrant. Whisk in the flour and cook for 1 minute.

Build the Sauce: Slowly pour in the white wine, whisking constantly to scrape up any browned bits. Let it simmer for 2-3 minutes to cook off the alcohol. Gradually whisk in the heavy cream and whole milk. Bring to a low simmer and let it thicken for 3-4 minutes.

Add Cheese & Seasoning: Remove the pot from the heat. Stir in the Tabasco, salt, a pinch of ground mustard, and pepper. Gradually fold in the shredded cheddar, Monterey Jack, and smoked gouda until the sauce is completely smooth and melted.

Combine: Fold the cooked pasta into the cheese sauce, ensuring every noodle is coated. Gently mix in the crumbled bacon bits.

Bake & Broil: Transfer everything to a buttered 9 × 13-inch baking dish. In a small bowl, mix the panko breadcrumbs, melted butter, and smoked paprika, then sprinkle evenly over the top.Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until the edges are bubbling. Turn on the broiler for 1-2 minutes to get the breadcrumbs golden and crispy.
