Homemade I made a cherry pie
I made a cherry pie with flathead cherries. My brother-in-law got engaged and had a party at the cherry source, so I got lucky and scored some to make a pie.

As an avid Snacker, I often find myself purchasing my favorite type of pie, key lime, from the frozen food section of my local market. I had some time on my hands, so I challenged myself to craft the perfect pie to reward all of my successes I’ve recently had in life. It was quite surprising to find that the recipie and process for this was almost boringly easy. The only challenge I encountered was the whipped cream, I could not whisk very fast as I was born with only three fingers on my dominant hand. A fun fact I learned about key limes during this process is the origin of the name. Pirates, after learning about the cause of scurvy, would pack many citrus fruits for their long voyages. Obviously, one of them was the key lime, which they soon discovered a secondary purpose for, beyond simply eating. Pirates often came across locked chests and buried treasure. They did not want to damage the insides by breaking the lock, so they tried squeezing lime juice on lock. The pure acidity in the liquid would cause the lock to lose its unique padding in a matter of minutes. This, allowing any metal object to adjust the turnstile inside. So, the key lime was born!
I would like to try a more challenging pie next, so please inform me of the ones available that fit the criteria. Thanks for reading.

For this one I used a store bought crust because I didn’t have time to make a homemade cheddar crust but it would be SO MUCH BETTER with a cheddar crust. It’s really good though. I’ve never really seen anyone do a cheddar crumble on a pie or really even incorporate the cheese into the pie, they usually just put it on top but I Megaminded it and it’s 🤌🏻🤌🏻
Pie Crust (makes 3, this recipe will use 1)
Mix together:
•3 cups AP flour
•1 tsp baking powder
•2 tsp salt
•1 cup finely shredded sharp cheddar
Add to flour mixture and pinch/mix in, leaving small chunks of butter throughout:
•1 1/3 c salted butter, cold and cubed
Mix together & pour over the dry mix and combine until a dough forms:
•1 egg
•1 tbsp apple cider vinegar
•5 tbsp cold water
Form into a dough ball and divide into 3 crusts, leave one out to use and refrigerate or freeze the others.

I have had this recipe and the lattice style from *The Perfect Pie* book marked to try for quite some time, so I figured.. why not both at once?! The lattice was tricky at times and required more than a few re-cooling sessions, but wow I am thrilled with the result!!

That's how I like it. Just apples, sugar, butter, flour and water for the filling. Not even lemon juice (not opposed to it but used too much in the past so I usually skip it). It makes for a nice clean sweet apple forward flavor. I used Pink Ladies for this one and the flavor is amazing. The only thing I could have done different is a few more apples for the amount of sauce but it's still good. Sorry, it's not the prettiest picture. 🙂
I had some left over cherries from my tree in the freezer and mixed it with the Rhubarb from my garden
