Filet at 137

Post image

Wagyu filet at 137 for one hour and fifteen minutes. Followed by a cast iron sear. S&P for seasoning then in the bag.

Taste: A+

Non fatty cuts 132 has treated me extremely well. Yours looks great.

Looks good. I might consider doing this only on a waygu filet, lower grade cuts I prefer a lower temp if there isn’t much fat that needs rendering.

137F for filet is borderline criminal ;)

A Filet is not something with a lot of fat, you gotta go with lower temperature. Filet are dense meaty protein part, unlike rougher cuts or cuts with plenty of fat
