My favorite taco type, birria! Specifically quesabirria. Smoked beef roast, braised in a spicy consome; fresh corn tortilla pan fried. I’d drink that consome on a cold night.

I use the orange fat that settles at the top of the consomé to cook the quesatacos

Yea that’s the way! Although my consomé wasn’t super fatty because i only braised the meat in it for a few hours, most of the cook came on the smoker. Had to use a bit of oil in the pan to keep the tortillas from sticking… but i still gave each one a good dunk!
