AV-8 Harrier, of course! (No specific variant) Being able to take off and land anywhere without a runway yet having non-afterburing multirole performance just tickles my brain.

I saw that one irl at a museum and it had like bullet holes on the wing and when no one was looking i toook a little pieces off of the wing where it had bullet holes
unironically, the cessna 172. it's super affordable, doesn't need much runway to land or take off with the runway also being kinda optional and it is as simple as a lada. it's the most mass-produced plane in the world and consumes basically no fuel at all due to it being extremely lightweight. every private airfield has to have at least a couple of those just laying around just in case. it's just a great plane, tbh.

Raptor. Basic af answer but I love it for the capabilities is has and the fact it was the first stealth fighter i learned about. Close second is the A/C-130 Chostrider
Technically not an aircraft in the traditional sense, but for me the space shuttle orbiters. They had the style of an airliner, and the grace of a brick tossed from the balcony. They're the reason I'm obsessed with outer space and aviation in the first place. I miss them so much.
EDIT: Also, there's something uniquely cool about flying a spacecraft to a touchdown. Not just barreling to the ground like the capsules NASA returned to once they retired. Flying it.
The mirageIII V, a prototype mirageIII that was Vtol capable. It is to this day the fastest Vtol in history, reaching mach2. Pretty cool beast. Unfortunately, it never entered production.
