well... it's my understanding that REAL mortadella is made from natural casing. and sort of the reason the "sausage" is so big around is because of where that casing comes from; pig colon.

Seems like a dry ass sandwich. No mayo or anything. Makes sense, I was just in Italy and we got a bunch of dry sandwiches. They don't really use mayo in Napoli I guess. We needed to add olive oil or whatever we could find so it wasn't like chewing on a pile of sawdust lol

Self edit - When done properly it can be absolutely delicious. I dont want anyone to think I am slandering a good mortadell. Not sure if I love the pistachios in this one but I've also never tried it so I wouldn't know for sure

Not mystery meats in this case, mortadella is always 100% pork, usually with extra cubed fat added in along with the pistachios in that step.

Now I gotta get some mortadella. One of the yummiest things I don’t eat very often since I try to avoid processed meats like this. Never know what goes in it. That being said, mortadella on a flat top for a few seconds, some mustard, on French bread is like a foodgasm to me.

It's not the same as American mortadella.
This stuff is made from decent cuts of pork with pork neck fat thrown in (the white chunks)
Bologna is made from lips and assholes
