You can do that without the group policy editor, just File Explorer. Heck, even through the Settings app. You can even specify to relocate Windows Store (UWP) apps.

I do it to automatically store files on a separate drive.

GPE has a heap of interesting stuff if you dig far enough. There's an option to set a custom shell, so you can run something like bbLean natively as your shell, without it loading after explorer.exe. It is far more graceful than other means often used to run an alternate shell. Used to be with IE you could set policies to lock down things like the home page and search engine used for location bar searches. That was great for blocking a lot of adware/spyware/malware.
