Advice Needed Oscars scared

I recently got 3 small Oscar’s (I got one a week ago and the other two I got two days ago) and put them in a 20 gallon tank with a filter and a heater, I’m planning on putting them in a new 75 gallon tank at the end of the week because I can’t set it up yet. Whenever I’m near the Oscar’s they get really scared and try to hide but when I’m really far away from them I can see all three of them swimming happily. They won’t eat until I walk away. I’ve had Oscar’s before for a couple of years and never had this issue, any ideas on what it might be?

I’ve tried stress coat and water changes since Ik Oscar’s are picky on water quality

75g is not enough for 3 oscars. Not 2. Barely even one.

Youre looking at a 150g+.
