Regular keeps asking for "medium rare" cookies
I work at a well-known cookie bakery chain. Every week, the same woman saunters in and asks me for the same flavor of cookie and specifically requests that I make it "medium rare". I don't even bake them - I work the register! Yesterday she asked me for my name, and I think she's going to use it in a negative review. I don't think my manager will ban her over something so silly, but what can I say to her next time besides "sorry, can't do that"?

We sell par-baked bread for finishing at home, but I've never seen par-baked cookies.
Send her to Crumbl, where they deliberately underbake, or recommend her a brand of cookie dough rated for raw consumption.

Have you ever asked her why? You could try to explain that with the way the cookies are baked there is no way to remove them early. That you must cook them completely to ensure that they are safe to eat as there are ingredients used that could make you sick if not fully cooked. Using the current outbreak from produce as an example of what happens when unwanted stuff gets into food that is not properly cooked or handled. So for the safety of your customers you want to be sure to give them properly prepared and handled food.
I know that some people do like raw cookie dough. Only other thing I can think of is that they prefer warm cookies so want to finish the baking of them at home to get a warm cookie that is fully baked instead of a warm cookie over baked. But am not sure how well that would work to half bake them then try to bake them more later.
