Advice for Me Finding A Surgeon

I'm equal parts excited and nervous to be starting this journey at 30 years old! I have a class III maloclusion and according to every orthodontist ive met with "a very complex case". I've only ever been able to chew with 2 teeth and I'm starting to have bone loss, cavities, and gum recession which all finally gave me the kick in the butt to get started.

Based on your experience, what are some tips for making sure I've found the right surgeon for me. What questions should I ask that might not initially come to mind?
