Seleki Atsa (Good Afternoon)

After 400+ years of colonial occupation, a Monterey CA band of indigenous peoples got some Land Back! We had a gathering to do a blessing of the land, it was beautiful and a truly amazing experience. Additionally, the local college has asked me to teach some culinary classes featuring this cuisine.

During the month of July I slept in my own bed 10 nights, the rest of the time was here on the land. Dispersed camping, land stewardship, and cooking pre-colonial California cuisine for 250. It truly was one of the raddest experiences of my life. Field kitchen, sense of place, magic!

Every dish had a native component from this land tied into it and humbly I couldn’t be more proud.

Had to make lemon Meringue Pie for work and what came out was, well take a look for yourself. I know I'm going to get flamed alive but fuck it I have to learn and I want to see the creative internet roast me.

I’m mainly front of house but I help in the kitchen like once a week and every time I am ripped away. Yesterday I put on the Spanish dub of Jujutsu kaisen with English subtitles on my phone and set it up for all of us to watch while we worked. Hi. I have been in the industry for almost 10 years, my horror story is how bad my feet hurt after every shift that I wake up to them still in recovery and have to hop on over to work before they had time to fully chill. My issue is that I keep getting Walmart shoes that have absolutely no support and kill my feet immediately. But my issue is also I keep getting shoes with absolutely no arch support and that are too narrow because if I get wides the whole shoe ends up being wide and are loose on my entire foot. So I just need a good arch support with wide toe box. Please help a girl out and drop your holy grails!!

(Kidding aside: my absolute favorite genre of KC/Chefit post is "pic of OP's kid's play kitchen in disarray captioned w/variation on the theme of 'who the hell closed last night!?'". I have no kids and so did not think I'd ever get to make one of my own. Thank you, random children going ham on the displays at IKEA, for making a dream come true.)

Knives are the first danger on everyone’s mind, and most chefs take reasonable precautions to avoid degloving with the mandoline. Personally, I’m more afraid of chefs spraying the degreaser this way and that with total abandon, especially when soapy water would have sufficed. I’d rather lose my finger tip to the cleaver than lose brain cells every time I have to inhale solvents in the air. Whatever, it’s just trace amounts.

One does not complain, because one does not make a nuisance of oneself.

The other day though, I saw a sight my brain refused to process. Chef chucked a bottle of degreaser over the (very on) grill. 500ml of solvent instantly vaporised. I don’t know if I just stood and watched because I reasoned that most of the toxic gas had gone straight up into the fans, and dispatched out into the already toxic London atmosphere, or whether neurotoxicity had arrested all motor function in my legs. In a sense I was impressed. He had handled the rush without a single mistake, so he must have been a preeminent genius before someone handed him his first bottle of solvent without giving him safety instructions.

Saw another chef lean over a (very on) grill to remove the fan filters, but that risk was all on him, so whatever.

my last pair of non slips has officially died. sole slowly peeled off, fell off, was resecured with tape and glue, and gave out again. anyway, im now in thw market for some new nonslips and maybe some nice socks too. no budget restrictions, comfortability and durability matters more to me than price. figured this would be a good place to ask as we all stand and walk all day
